Colors for plain text files

I hope this question wasn't asked before.

I configured a custom syntax highlight (son of obsidian) for C/C++ editing, but I'd like to read and edit plain text files too.

They are shown with black foreground over white background. Is it possible to change colors for plain text editing?

I don't know the answer, but I'll be happy if someone knows how to do it.
